Popular dishes include flying fish with cou-cou (the national dish made with cornmeal and okra), macaroni pie, pepperpot stew, and pudding and souse (a pickled pork dish often served on Saturdays). Carnival in Barbados is celebrated as part of the Crop Over Festival, the island’s most vibrant and anticipated event of the year. The highlight is Grand Kadooment Day, held on the first Monday in August, when revelers in dazzling costumes parade through the streets to the sounds of soca and calypso. Leading up to Kadooment, events like Foreday Morning Jam, Cohobblopot, and numerous fetes fill the island with nonstop energy.
